2 ½ cup bread flour

1 cup brown sugar

½ cup white sugar

1 tsp salt

1 tsp nutmeg

¾ cup vegetable oil

2 tsp cinnamon

1 tsp baking powder

1 tsp baking soda

1 cup buttermilk

1 large egg

Directions

Step 1

Preheat oven to 350 degrees.

Step 2

In a bowl mix together 2 1/2 cups of flour, 1 cup brown sugar, 1 cup white sugar, 1 tsp salt, 1 tsp nutmeg, 1 tsp cinnamon and 3/4 cup of soybean oil (vegetable oil is okay too).

Step 3

Once you get a crumbly texture, reserve 1/2 cup of that mixture for the topping. Add 1 tsp cinnamon to this and mix together. Set aside for later.

In a separate bowl mix in 1 large egg, 1 tsp baking soda, 1 tsp baking powder, and 1 cup of buttermilk. (If you can't find buttermilk, in a measuring cup add 1 tablespoon of vinegar and add regular milk until it reaches the 1 cup mark. Mix and let it sit for a few minutes and it turns to buttermilk).

Step 5

Now add your wet ingredients to your dry ingredients and fold your ingredients and try to not over mix the batter to avoid air bubbles.

Step 6

Grease a 7x11 cake pan and add the coffee cake batter into the pan. Then sprinkle the cinnamon crumb topping all over the batter.

Step 7

Bake it in the oven at 350 degrees for 25-30 minutes. Let it cool for a bit and then enjoy!
