Ingredients
4 frozen hashbrowns
4 eggs
1 - 2 tablespoons butter to cook the eggs
1 - 2 in small avocadoes, cut half, pitted and sliced IN the rind
1 cup fresh arugula
Everything but the bagel seasoning
Directions
Step 1
Preheat your airfryer to 400 degrees for 5 minutes
Step 2
While the air fryer is getting heated up, make the eggs over easy in a medium sized non-stick pan on the stove.
Step 3
Add the hashbrowns to the air fryer and cook at 375 / bake setting for 16 minutes or until perfectly crispy (I like to go a little over because I am going to top mine with wet ingredients and want to make sure they stay crispy)
Step 4
Top the hashbrowns with the avocado and smash with a fork. Season with salt and pepper and EBTB seasoning
Step 5
Top the avocado with a bit of arugula, and a fried egg on each hashbrown, season and serve immediately
