Ingredients
1 lb cooked Rotini pasta noodles
Boursin garlic & fine herb cheese
2 zucchinis, chopped into bite sized pieces
4 oz white mushrooms, sliced
½ cup grated Parmesan cheese
12 in Grape tomatoes, cut half
½ cup Sun dried Tomato feta, crumbled
2 - 3 tablespoons cilantro, chopped
2 - 3 tablespoons roasted, salted Pumpkin seeds
1 - 2 tablespoons Olive oil
1 - 2 tablespoons butter
2 tsp Garlic powder
2 tsp Onion powder
1 tsp Salt
1 tsp Pepper
Directions
Step 1
Prepare the rotini noodles according to the package instructions. Drain and set aside.
Step 2
While the pasta is cooking, saute the zucchini, and mushrooms together in a medium sized pan on the stove with a little butter or olive oil.
Step 3
In the warm pot from the drained pasta, add the butter and toss the pasta back into the pot.
Step 4
Place the Boursin cheese in the middle then surround it with all the rest of the ingredients.
Step 5
Stir together and serve immediately for a warm pasta dish. Serve cold for a yummy lunch pasta salad.
