These healthy baskets are a great “takeout” option for kids and adults alike - enjoy them poolside or in the backyard. The stuffed peppers are super easy to make and the perfect refuel after a long day of playing Marco Polo or doing yard work. The twisty taralli bring out the fun side of crackers. Ingredients

1 cup ranch dressing

1 cup creamy feta dressing

8 ounces aged white cheddar,

sliced into rectangles

8 ounces mild cheddar, cubed

10 plant based stuffed mini peppers

1 English cucumber, sliced

3 radishes, sliced

1 cup dill pickle almonds

18 fennel taralli crackers

18 flatbread crackers

Fresh basil leaves, for garnish

2 or 3 radishes, with greens on, for garnish

Directions

Step 1

Line three plastic baskets with parchment paper.

Step 2

Divide the ranch and feta dressings into three small bowls. (Try a radicchio bowl for extra style points!)

Step 3

Place one bowl in the center of each basket and serve the other dressing on the side.

Step 4

Arrange the cheddar cheeses in the baskets.

Step 5

Add the stuffed peppers, cucumber, radish slices, almonds, taralli, and crackers.

Step 6

Garnish with the basil and whole radishes
