Ingredients
16 corn tortillas
1 head yellow/orangey cauliflower
2 tbsp curry powder
1 tbsp cumin
2 tsp garlic powder
2 tsp onion powder
Salt
Pepper
Olive oil
1 large ripe avocado
2 tbsp Mayo
1 clove garlic
1 tbsp juice from jar of pickled red onions

Step 1
Prep the cauliflower and get it in the oven
Step 2
Make the avocado crema in the food processor by combining the avocado, mayo, garlic and pickled red onion juice, salt and pepper.
Step 3
Hit the tortillas with a little fire, so they are pliable for filling or heat in the microwave covered in a wet paper towel at the very least.
Step 4
Line a baking sheet with foil or parchment paper.
Step 5
Prepare the tacos by layering each tortilla with cauliflower and cheese, scallions and pickled red onions. Stack them on the baking sheet.
Step 6
Drizzle the tortillas lightly with olive oil to and bake in the oven at 425 for about 7 minutes on each side

7. Serve right off the sheet pan with the avocado crema, cilantro, jalapenos and any other taco sides you like for a super easy weeknight meal for the family!
