6 sheets phyllo dough
½ stick butter
½ cup Kelly's Oregon Strawberry Jelly
8 oz Tillamook Aged White Cheddar, crumbled
½ cup caramelized onions (homemade or storebought is fine)
Preheat the oven to 375 degrees.
Lay out the phyllo dough and cut it with the pizza cutter into 12 squares.
Spray your muffin pan with the cooking spray then place each phyllo dough square (6 sheets in each) into the pan to make 12 cups
Spray with the cooking spray again then fill with the crumbled cheese, 1 tablespoon caramelized onions, and 1 tablespoon jelly.
Sprinkle on salt and pepper and drizzle with olive oil
Bake at 375 degrees F for 25 minutes until the edges are crispy and flaky and golden brown.
