Hatch Green Chili Bean Dip

My good friend Malia @madamsjams sent me a glorious jar of perfectly charred hatch green chilis and I knew I had to make a delish cheesy dip with them! The perfect amount of mildly spicy green chilis combined with pinto beans, goat cheese, cream cheese and a top of Manchego make this dip absolutely delish for parties or just for you! I like to serve it with freshly toasted crostinis or crackers.

Ingredients

8 oz cream cheese

4 oz plain goat cheese

2 T butter

¼ cup grated parmesan cheese

½ cup chopped Manchego

2 cloves minced garlic

1 tsp sea salt

1 tsp pepper

1 tsp onion powder

5 - 6 Hatch green chilis, finely chopped with a couple of larger chunks for the top so you can see what kind of dip it is!

1 cup cooked pinto beans

Tools

Pie dish or other baking dish you like to use for dips

sheet pan for making crostinis

Medium sized bowl

Rubber Spatula

Directions

Step 1

Combine the softened cream cheese, goat cheese, butter and parmesan cheese in a bowl.

Step 2

Add the seasonings and transfer to a baking safe dish like this adorbs pie dish

Step 3

Spread the dip out to create a nice even layer then add the pinto beans, chopped green chilis, and the manchego cheese

Step 4

Drizzle with olive oil and sprinkle on a bit of sea salt and pepper.

Step 5

Bake for 15-20 minutes or until the dip is thoroughly heated through and bubbling on top!

Step 6

Serve with crostinis, crackers, and veggies.
