Ingredients

8 fresh figs

1 cup granulated sugar

1 tablespoon lemon juice

½ teaspoon vanilla extract

Directions

Step 1

Wash the figs thoroughly and remove the stems. Cut them into small pieces.

Step 2

In a medium-sized saucepan, combine the figs, sugar, lemon juice, and vanilla extract.

Step 3

Place the saucepan over medium heat and stir the mixture until the sugar dissolves completely.

Step 4

Bring the mixture to a boil, then reduce the heat to low. Simmer the jam for about 45 minutes, stirring occasionally.

Step 5

As the jam cooks, use a potato masher or the back of a spoon to break down any large pieces of fig.

Step 6

To test if the jam is ready, place a small amount on a chilled plate and tilt it. If the jam sets and wrinkles slightly, it's done. If not, continue cooking for a few more minutes and test again.

Step 7

Once the jam is ready, remove the saucepan from the heat and let it cool for a few minutes.

Step 8

Transfer the jam into a sterilized jar leaving a little space at the top. Seal the jar tightly.

Step 9

Allow the jam to cool completely before storing it in the refrigerator for 2-3 weeks or up to 1 week at room temp!

Step 10

Enjoy your homemade jam on toast, crackers, or as a delicious addition to cheese boards for sure! I love it with goat cheese or a nice sharp parmesan!
