Ingredients
1 large papaya, cut horizontally and seeds removed
2 tbsp chia seeds
1 can coconut milk
3 - 4 tbsp honey
2 tsp bee pollen (I like Naturacentric)
3 tbsp shredded coconut
2 tbsp Groundup PDX Nut Butter
¼ cup chopped pecans
Directions
Step 1
Prepare the chia pudding by combining the chia seeds and the coconut milk and letting it sit in the fridge overnight or for at least 15 minutes.
Step 2
Hollow and seed the papayas and fill with the chia pudding.
Step 3
Top with the rest of the ingredients. Eat right out of the papaya bowl with a spoon!
