Breakfast Street Tacos with Bombay Bitchin' Sauce

The most complicated part about making these tacos is the scrambled eggs which come together very quickly with just a couple of ingredients. I love a spicy sauce and Bitchin' sauce always hits. This "Bombay" version has curry powder in it for a delicious Indian kick.

Ingredients

8 - 10 eggs

2 T butter

6 - 8 small flour tortillas

8 oz Bombay Bitchin sauce

Cheddar cheese, shredded

Cilantro, chopped

Scallions, chopped

Micro greens

Tools

Directions

Step 1

Scramble your eggs with butter in a non-stick skillet over medium-low heat.

Step 2

Warm the tortillas over an open flame or in a wet paper towel in the microwave.

Step 3

Top the tortillas with a tablespoon of the bitchin sauce, a scoop of the scrambled eggs, cheddar cheese, chopped scallions, cilantro, and microgreens.
