8 - 10 eggs
2 T butter
6 - 8 small flour tortillas
8 oz Bombay Bitchin sauce
Cheddar cheese, shredded

Scramble your eggs with butter in a non-stick skillet over medium-low heat.
Warm the tortillas over an open flame or in a wet paper towel in the microwave.
Top the tortillas with a tablespoon of the bitchin sauce, a scoop of the scrambled eggs, cheddar cheese, chopped scallions, cilantro, and microgreens.
