½ cup feta cheese, crumbled

Fresh basil

pepper

Butter

8 slices toasted, buttered bread

Optional toppings:

Truff Hot Sauce

Cilantro

Jalapenos

Tools

sheet Mini pan

Directions

Step 1

Preheat your oven to 350 degrees.

Step 2

Crack your eggs onto your sheet pan then top with the feta cheese, and peppers.

Step 3

Sprinkle on salt and pepper

Step 4

Bake for 10 minutes or to your desired egg runny-ness. Is that a word?

Step 5

While the eggs are baking, toast the bread and butter it.

Step 6

Set out hot pan holders in the middle of your dining table to prepare for the sheet pan. Spread your toppers around that on little plates and in bowls. I like to serve mine with some chimichurri or hot sauce and sweet and spicy jalapenos, plus extra fresh herbs.

Step 7

Place the sheet pan on your table and go!
