100 gr Guanchiale o Tocineta

2 Cdas Aceite Guanciale o Tocineta

4 Yemas (Grandes)

½ Taza Pecorino o Parmesano

Pimienta al gusto

250 gr Pasta al Dente

2 Cdas Agua Pasta

100 gr Guanciale or Bacon

2 tbsp Guanciale or Bacon Oil

4 Large Egg Yolks

½ cup Pecorino or Parmesan Cheese

Pepper to taste

250 gr Al Dente Pasta

2 tbsp Pasta Water

Step 1

Pica y sofrie el guanchiale en un sarten y aparta.

Step 2

En un bol agrega yemas, queso pecorino rallado, pimienta, aceite de guanchiale y revuelve muy bien.

Step 3

Agrega la pasta, 2 cucharadas del agua de la pasta y continua revolviendo.

Step 4

Incorpora guanchiale, un poco mas de su Aceite y revuelve.

Step 5

Sirve y agrega mas de queso rallado.

Step 1

Chop and fry the guanciale in a pan and set aside.

Step 2

In a bowl, add egg yolks, grated pecorino cheese, pepper, guanciale oil and stir well.

Step 3

Add the pasta, 2 tablespoons of the pasta water and continue stirring.

Step 4

Incorporate the guanciale, a little more of its oil and stir.

Step 5

Serve and add more grated cheese.
