1 cup rotisserie chicken, shredded

6 cloves garlic, minced

¼ cup soy sauce

¼ cup coconut vinegar

4 cup day old rice

Directions

Remove meat from rotisserie chicken and shred it up.

Mince garlic and sauté it with oil on medium heat until lightly golden brown.

Add the shredded chicken, soy sauce, coconut vinegar, black pepper, sugar, and bay leaves. Cook that down for 8-10 minutes until the chicken has soaked up all of the liquid and most of the moisture has evaporated.

Add the day old rice and combine until fully incorporated (3-5 minutes).

Serve with green onion on top and enjoy.
