Oven Roasted Chicken

clean/cut up all vegetables listed in the ingredients and add those to the pan. Pour in two cups of water, two cups of chicken broth and one cup of Olive oil into the pan as well. Cut the backbone out the back of the chicken, clean/season it with those listed seasonings above and place the backbone to the pan as well and place the rack on top as seen in the video.

Take two sticks of softened butter, place it into a bowl and add 2 tablespoons of each of those seasonings listed in the seasoning list above; be sure to mix it well as this will be your base spread that will go over the chicken. Thoroughly clean your chicken inside and out, place it on a safe dish, pat dry with napkins and get ready to base it with your butter spread.

Using your hands, or whatever you prefer, start to spread the butter underneath the skin of the chicken as well as on the backside of it as seen in the video. Turning the chicken over on its back, rubbing some balsamic garlic olive oil on top and seasoning it with all seasonings listed; two tablespoons of each seasoning.

Place your chicken on top of the rack and place it in the oven on 375 Degrees for 1hr. After that 1hr remove from the oven and microwave the rest of the butter spread to melt it and use that to inject the chicken. Place back in the oven for 1hr 20mins. Remove from the oven, allow the temperature to drop and enjoy.
