Deep Fried Cornish Hen

- Thoroughly Clean your Hens in a bowl with sliced lemons, 1/2 cup of vinegar, and 2 Tablespoon of sea-salt.

After Cornish hens are clean, pat dry and prepare your seasoning mix. In a small bowl add 3 Tablespoons of the following seasoning: Black Pepper, Goya Sazon, Garlic Powder, Paprika, Crushed Red Pepper, Onion Powder, & Adobo Seasoning. Mix Well. 

Generously sprinkle seasoning mix onto the Cornish hens until both sides of the Hens are well seasoned. In two separate bowls add 6 eggs to one bowl and in the other bowl add 2 cups of flour and season your flour with that exact same seasoning mix you prepared earlier as seasoning will slide off slightly after dipping the Cornish Hens in the egg mix. 

Place your deep frying pot on the stove and place cooking oil inside up until the middle point (depending on size) You DO NOT want the cooking oil to jump out the pot. 

While Waiting for the cooking oil to get hot, grab your seasoned Cornish Hens and place them in the egg mixture. Fully coat them in the egg mix, remove them and add them to the flour batter & coat them well.

Take Hens from the flour batter and add them to the hot cooking oil allowing them to fry until frying gets quiet and Hens rise to the top of the pot. You can leave them in there a little longer to allow them to fry hard (Optional) but highly recommended!

Remove them from the pot and place on a Baking rack to drain cooking oil. 

To the Measuring cup add,  2 Tablespoons of Minced Garlic, 1 cup of BBQ sauce, 2 Fresh Squeezed Lemons, and 1/2 cup of honey. Place in a microwave for 45 seconds take out and paint over the the Cornish Hens.
