Cheesy Red Skin Potatoes

Place Potatoes in a strainer and thoroughly wash them in warm water.

Once Potatoes have been cleaned place them on a cutting board and slice them in half's.

Place Potatoes in boiling pot with 2 tablespoons of sea salt, and 1/2 cup of olive oil and allow them to boil for 20 minutes until potatoes are soft but slightly hard.

Once they are done boiling add them to the skillet on low heat with a 1/2 cup of olive oil and a few slices of butter. Allow them to sear for 10-15 minutes.

After they have seared for 10-15 minutes season potatoes with sea salt, black pepper, crushed red pepper, garlic powder, and parsley. Add a few more slices of butter to the skillet as needed and 1/2 cup of olive oil to prevent potatoes from sticking to skillet.

Add parmesan cheese as well as Colby & jack and Mozzarella cheese to the potatoes covering with aluminum foil allowing the cheese to melt. Once melted turn stove off and enjoy!
