Mint Matcha Cookies (Evergreen Cookies)

I was stoked to create these Mint Matcha Cookies (Evergreen Cookies) when the idea hit me some point over these last couple months in new Mamma mode. I felt inspired by snowy evergreen trees, and ended up with a refreshing minty buttery cookie, that tastes like green tea and mint ice cream combined.

Ingredients

Dry

1 ½ cup flour

½ tsp baking powder

¼ tsp salt

4 tbsp matcha powder

Wet

1 stick butter, melted

½ cup sugar

1 egg

1 tsp vanilla extract

1 mint extract

Directions

Step 1

Preheat oven to 350

Step 2

Mix all the dry ingredients in a bowl, mix all the wet ingredients in a separate bowl; then combine the dry and wet mixtures in one bowl, and mix everything together until a dough forms.

Step 3

Scoop the dough on to an un-greased baking pan, and press down to flatten the dough a little bit.

Step 4

optional- roll the cookie dough in powdered sugar first, then place on to an un-greased pan before baking (if you’re going for the snowy evergreen vibe).

Step 5

Bake the cookies in the oven for about 12 minutes, and allow them to cool before taking them off the pan.
