Honey Butter and Sage Sweet Potato Boats

Ingredients

1 in sweet potato, cut half and roasted until tender

1 tbsp butter

½ tbsp honey

1 tsp dried sage

pinch of salt and pepper

Directions

Step 1

Cut the sweet potato in half and roast in the oven face down at 375 for 50 minutes; I like to coat the halves in some oil, salt and pepper.

Step 2

When the sweet potato is fork tender, scoop out the sweet potato from the skins into a bowl, add the butter, sage, salt and pepper, and then mix everything together in the bowl until well combined.

Step 3

Add the sweet potato mixture to the sweet potato skins, and top with a little more of everything- a thin slice of butter, a drizzle of honey, sprinkle on some sage and add some salt and pepper.

Step 4

Put the sweet potato boats back in the oven for about 10 minutes at 425, allow to cool for about 10 minutes, and then dig in!
