Ingredients
Dry

1 ½ cup flour

½ tsp baking powder

¼ tsp salt
Wet

½ cup (1 stick) butter, melted

½ cup sugar

1 egg

1 tsp vanilla
Toppings

5 pitted dates, mashed into a paste

¼ cup semisweet chocolate chips

2 tsp coconut oil

½ cup chopped cashews

Step 1
Preheat oven to 350
Step 2
Mix all the dry ingredients in a bowl, mix all the wet ingredients in a separate bowl; then combine the dry and wet mixtures in one bowl, and mix everything together until a dough forms.
Step 3
Scoop the dough on to an ungreased sheet pan, and press a well in the middle of each one, using your thumb.
Step 4
Roll a tiny amount (about 1/2tsp) of the mashed dates into a ball; gently press that into the center of the cookie well. Bake in the oven for about 15 minutes.
Step 5
While the date filled cookies bake, melt the chocolate and oil together using a double boiler; keep it warm over low heat until you’re ready to drizzle it over the cookies.
Step 6
Place the cookies into the freezer for a quick cooling process, then, drizzle them with chocolate, and top with the crushed cashews.
Step 7
Place the cookies back in the freezer or the fridge until the chocolate has hardened completely, and then enjoy.
