Ingredients

3 lbs chicken breast or tenders

1 apple, cut into 1/2 in cubes

1 peach, cut into 1/2 in cubes

4 ribs celery, 1/4 in slices

1 cup walnuts, roughly chopped

4 sprigs green onion, chopped

¼ cup parsley, chopped

½ cup plain whole milk greek yogurt

½ cup mayo

2 tbsp dijon mustard

1 tbsp vinegar, champagne, red wine vinegar, white, acv, whatever you have!

Olive oil for chicken

Salt and pep for seasoning

Preheat oven to 350F.
Step 2
Prep chicken by drizzling some olive oil and seasoning it with salt and pepper. Toss to coat.

Cook in the oven until the internal temp reaches 165F. The cook time will change depending on what cut of chicken you use, but expect anywhere from 15-30 minutes.

Remove the chicken, let cool, then shred into bite sized pieces. I personally like some bigger pieces for a more toothsome bite.

While the chicken is cooking prep everything else!

Combine the whole milk, mayo, mustard, and vinegar in a very large bowl. Season with salt and pep and give it a a taste!

Add the rest of the ingredients (including shredded chicken), and toss to coat everything. If the walnuts are raw just dry toast them in a pan until fragrant.
