Ingredients
EVERYTHING FOR THE SAMMI

4 slices of bread, ideally sourdough (if you're making 2 sammies)

2 tbsp butter

3 endive, thinly sliced down the length of the endive. (So cutting hamburger not hotdog ya feel?)

Β½ cup beet sauerkraut (or any kind of kraut or kimchi you like!)

1 tbsp apple cider vinegar

1 garlic clove, grated

Salt n' pep

6 hard boiled eggs, peeled

ΒΌ cup chives or green onion, finely chopped

3 tbsp cup mayo

1 tbsp mustard, yellow, dijon, whatever!

Β½ tsp salt

Fresh cracked black pep

ΒΌ tsp smoked paprika

1 tsp truffle hot sauce (or whatever your favorite is!)

Step 1
Get your egg salad mixture together! Full recipe below. Set aside in the fridge while you make everything else.
Step 2
Combine endive, sauerkraut, garlic clove, apple cider vinegar, and some salt n' pep. Just mixie mix and set aside.

Set a large skillet over medium high heat and melt 1/2 tbsp butter. Toast 2 slices of bread for 2-5 minutes on one side (just a light golden brown toast), add another 1/2 tbsp butter and toast the other side. Repeat with the other 2 slices of bread. Set aside.

To assemble, add egg salad to one slice, then micro greens topped with the slaw mixture on top to the other slice. Combine, slice in half, and

Egg Salad Sammi
Step 1
Chop the hard boiled eggs into about 1/2 in pieces. It doesn't need to be too precise.

6 hard boiled eggs, peeled

Add the chopped eggs and ALL OTHER INGREDIENTS (minus the bread, butter, and lettuce obviously) to a bowl and mixie mix.
