Not Boring Beef n’ Broccoli πŸ₯¦

Not only is it totally not boring, but we don’t use any refined sugar making this good and good for you. I mean hello, PROTEIN. 🀌🏻 Plusssss we pack on some immune boosting ginger and garlic cause HEALTH. ✨ This is your β€œBetter Than Takeout” weeknight friendly new dinner bestie, ok?

Ingredients

Sauce
β€’ 1/3 cup soy sauce or coconut aminos
β€’ 1 tbsp grated ginger
β€’ 1 tbsp grated garlic, about 4 cloves
β€’ 3 tbsp maple syrup
β€’ 1 tbsp blackstrap molasses
β€’ 1 tsp sesame oil (toasted or un toasted is fine)
β€’ 1 tsp rice wine vinegar
β€’ 2 tbsp corn starch
β€’ 1/2 cup hot water
Beef and Broccoli
β€’ 1 lb shaved beef steak (I got mine at Trader Joes, but you can just ask the butcher to do it too)
β€’ 2 small heads of broccoli, florets separated from the stem
β€’ 1/2 medium yellow onion, sliced
β€’ Olive oil for cooking
β€’ Salt and pep for seasoning
Rice
β€’ 2 cups water
β€’ 1 cup jasmine rice
Assembly
β€’ 2 sprigs of green onion cut on a bias
β€’ Sesame seeds
β€’ Chili crisp

Directions

1.
First start on your rice. I personally like jasmine rice here, but use any rice that you have and cook it according to the package instructions. However, please make sure you rinse your rice until the water running through is clear! For jasmine I rinse and do 2 cups water to 1 cup rice. You can also double this quantity if you love rice and/or want to stretch this meal farther.

Make your sauce. You're going to combine the soy sauce, ginger, garlic, maple syrup, molasses, sesame oil, and vinegar. Then add in the corn starch and whisk to combine. Slowly add in the hot water while whisking to further break down the corn starch and help it incorporate. Taste it and add some black pepper if you think it needs it. Set this aside for now.

Heat 2-3 tbsp olive oil in a large skillet over medium heat. Add in onions and broccoli, season with some salt and pep, and cook for about 5 minutes. You want to stir it frequently during this stage so that evenly gets evenly softened. Then let it cook undisturbed for another 2-3 minutes to get the veg a little bit browned/charred. Remove and set aside.

β€’ 2 small heads of broccoli, florets separated from the stem
β€’ 1/2 medium yellow onion, sliced
β€’ Salt and pep for seasoning

Add another 1-2 tbsp of olive oil to the pan and increase the temp to medium-high. Add in the shaved beef and let cook undisturbed for about 2-3 minutes. You want that initial layer to get browned, because browning is flavor!! Then use a spoon or spatula to stir it all around until most of the beef is cooked, but some of the pieces are still a little pink.

Add the broccoli and onions back to the pan and mix to combine. Then add in the sauce mixture and lower the temp to medium-low. Stir until the sauce has thickened to your desired consistency; about 2-3 minutes.
β€’ 2 small heads of broccoli, florets separated from the stem
β€’ 1/2 medium yellow onion, sliced

Assemble with some white rice, the beef and broccoli mixture, and any toppings you like! I did green onions in the video, but sesame seeds and chili crisp are also wonderful additions!
