Glowing Skin Raw Carrot Salad

Yeah I said it, this is ~glowing skin~ carrot salad. Chock full of beta-carotene, vitamin c for collagen production, vitamin k, antioxidants, and other anti-bacterial and anti-inflammatory properties.

Ingredients

1 lb carrots peeled into strips
1/4 cup cilantro, finely chopped
sauce
3 tbsp tahini
2 tbsp honey
1 tbsp maple syrup optional
2 tbsp apple cider vinegar
1 tbsp olive oil
1/2 tsp salt

Directions

1.
Combine all of the sauce ingredients in a bowl and whisk to thoroughly combine.
2.
Add in the carrots and cilantro and toss to coat.
3.
Taste and adjust to your liking :)
