Ingredients

Ghee, tallow, or oil

1 yellow onion, chopped

4 cloves garlic, minced

1 red bell pepper, chopped

2 to 3 dried chipotle chilis, hydrated and blended OR 2 tbsp chili powder

1 lb shiitake mushrooms, sliced

1 Β½ lbs beef stew meat

28 oz can fire roasted tomatoes

2 cups water

1 can kidney beans

1 can black beans

3 tbsp dried oregano

1 tbsp chili powder

1 tsp cumin

1 tsp salt, plus more to taste

1 Juice of lime

2 tbsp maple syrup or honey

Toppings: cheddar cheese, cilantro, greek yogurt, more lime juice

Step 1
Cook the beef in a large dutch oven with some ghee, tallow, or oil, over medium-high until all sides are browned. Season with salt and pepper. Remove and set aside.

Add the onions, garlic, and peppers and sautΓ©, scraping up the bottom browned bits, until softened.

Add in the mushrooms and cook until softened.

Add in the fire roasted tomatoes, blended chilis, and 2 cups of water. Once again scrape the bottom to get all those browned bits.

Add in the beef, beans, oregano, chili powder, cumin, and salt. Let simmer on low for at least 1 hour, but ideally 2.

Add the lime juice and maple syrup or honey.

Taste for seasoning, add extra water if it boiled down too much for your liking.
