Fairly Fancy Chili

This isn’t my traditional chili, this is my fairly fancy chili. I knew that I wanted to load up on as many nutrients as possible, so I included bell peppers, shiitake mushrooms, and thick chunks of beef stew meat.

Ingredients

β€’ Ghee, tallow, or oil
β€’ 1 yellow onion, chopped
β€’ 4 cloves garlic, minced
β€’ 1 red bell pepper, chopped
β€’ 2 to 3 dried chipotle chilis, hydrated and blended OR 2 tbsp chili powder
β€’ 1 lb shiitake mushrooms, sliced
β€’ 1 1/2 lbs beef stew meat
β€’ 28 oz can fire roasted tomatoes
β€’ 2 cups water
β€’ 1 can kidney beans
β€’ 1 can black beans
β€’ 3 tbsp dried oregano
β€’ 1 tbsp chili powder
β€’ 1 tsp cumin
β€’ 1 tsp salt, plus more to taste
β€’ 1 Juice of lime
β€’ 2 tbsp maple syrup or honey
β€’ Toppings: cheddar cheese, cilantro, greek yogurt, more lime juice
β€’ Salt and pepper for seasoning

Directions

1.
Cook the beef in a large dutch oven with some ghee, tallow, or oil, over medium-high until all sides are browned. Season with salt and pepper. Remove and set aside.

Add the onions, garlic, and peppers and sautΓ©, scraping up the bottom browned bits, until softened.

Add in the mushrooms and cook until softened.

Add in the fire roasted tomatoes, blended chilis, and 2 cups of water. Once again scrape the bottom to get all those browned bits.

Add in the beef, beans, oregano, chili powder, cumin, and salt. Let simmer on low for at least 1 hour, but ideally 2.

Add the lime juice and maple syrup or honey.

Taste for seasoning, add extra water if it boiled down too much for your liking.

Top with cheddar cheese, yogurt, cilantro, and more lime juice.

FREEZING: I added mine to 1 cup portioned Souper Cubes and then transferred to compostable ziplock bags once frozen. Eat within 4-6 months.
