Ingredients

1 lb (8ish) chicken tenders

¾ cup finely ground cornmeal

1 cup panko breadcrumbs

2 eggs

Garlic powder

Chili powder

Salt n' pep

spray oil (I prefer coconut oil for the flavor)

for the honey mustard

¼ cup honey

¼ cup dijon mustard

2 tbsp mayo

Preheat air fryer to 400F

Let's prepare the dredging station. Grab 3 bowls and add cornmeal to 1, 2 eggs (mixed up) to another, and panko to the last one. Season all bowls with salt and pepper and the dry bowls with some garlic powder and paprika. No real measurements, but about 1/8-1/4 tsp.

Working one piece of chicken at a time, and using one hand at a time to keep one dry and one wet, coat the chicken tender in corn meal. Then plop into the egg and using your other hand coat in egg and allow the excess to drip off. Then plop in the panko and revert back to that dry hand and PRESS the chicken into the panko! I like to add some panko to the top of the piece so I have something dry to hold onto when I flip it to fully coat.

Repeat with all chicken tenders.

Liberally spray your air fryer basket liner and both sides of the chicken with oil. Once again I prefer coconut oil spray for the flavor.

"Fry" for a total of 10-12 minutes, flipping half way and respraying the top once flipped.

Check the internal temp and make sure it got to 165F!!

While that's cooking, combine the honey, mustard, and mayo for a quick n' easy honey mustard. You can also whip yourself up some broccoli or other veggies to make this a full meal. For the broccoli I just sautéed in some olive oil and seasoned with the garlic powder, chili powder, and salt and pep since they were already out.
