Ingredients

½ cup whole milk cottage cheese

1 egg

¼ cup milk

¼ tsp vanilla extract

1 tbsp honey, plus more for drizzle (maple syrup works too!)

¾ cup AP or whole wheat einkorn (you can sub regular flour, but you'll lose out on some protein and nutrients)

pinch of salt

Flaky salt for topping

2 tbsp for cooking

Directions
Step 1
Whisk together wet ingredients.

Add flour and salt and whisk once again to combine.

Heat 1 tbsp (per batch) of butter in a large skillet over medium heat. Once melted add in pancake batter by the 1/4 cup. I like my pancakes to get a little dark and crispy, so I just pay attention to what the edges of the pancake looks like. This usually takes 3ish minutes on my stove. You can always use a spatula to gently lift the pancake to test for your desired doneness. Flip and cook for another 1-2 minutes.

I like to add berries in between each layer of pancake AND on top. I top the whole stack with more honey, flaky salt, and that's it!
