Chicken, Bone Broth Rice + Bean Bake

I love a super hearty dinner that not only is easy to throw together and has elements I can prep ahead of time, but is delicious, my whole family will eat it, minimal dishes, and probably even makes leftovers. Feel free to swap the chicken drumsticks for bone in chicken thighs or breasts, but my preference is something bone in. It all gets topped with a riff on my healthy homemade ranch, but I make it with lime juice and cilantro!

Ingredients

Subrecipe 1

β€’ 3 lbs chicken drum sticks
β€’ 1/4 cup plus 1 tbsp olive oil
β€’ 2 tbsp lime juice, acv, white balsamic vinegar, or champagne vinegar
β€’ 2 tsp chili powder
β€’ 2 tsp smoked paprika
β€’ 1 tsp onion powder
β€’ 1 tsp garlic powder
β€’ 1 tsp cumin seed (ground is also fine!)
β€’ 1 tsp turmeric
β€’ 1/4 tsp black pepper
β€’ 1 can black beans
β€’ 1 onion, diced
β€’ 4 cloves garlic, finely chopped
β€’ 2 cups rice
β€’ 4 cups bone broth

Gut Healthy Homemade Ranch

β€’ 1/2 cup plain, whole milk greek yogurt
β€’ 1/2 cup sir kensingtons avocado mayo
β€’ 1 tbsp lime
β€’ juice
β€’ 1/2 tsp dried parsely
β€’ 1/2 tsp garlic powder
β€’ 1/4 tsp onion powder
β€’ 1/4 tsp salt
β€’ Some freshly cracked black pepper
β€’ 1 Optional tbsp finely chopped fresh cilantro.

Directions

Subrecipe 1

1.
If cooking right away preheat the oven to 425F. If you're prepping/marinating the chicken ahead of time skip this.

Add 1 tbsp olive oil, onion, and garlic to a baking dish. Season with salt and pepper. Add to the preheating oven to gently sautΓ© while you prep the chicken. (they shouldn't really brown at all while in the oven, just soften) Save the remaining 1/4 olive oil for the chicken marinade.

β€’ 4 cloves garlic, finely chopped
β€’ 1/4 cup plus 1 tbsp olive oil

Combine olive oil and seasonings in a large bowl.

Add in the chicken and thoroughly coat in the spice mixture. Feel free to do this ahead of time or even overnight!

Remove the baking dish from the oven and add in the rice, beans, and bone broth. Stir to make sure the rice doesn't remain in a clump.
β€’ 1 can black beans
β€’ 2 cups rice
β€’ 4 cups bone broth

Add in all of the chicken trying to keep some of the skin poking out of the liquid.
β€’ 3 lbs chicken drum sticks

Cover with the baking dish lid, a baking sheet, or aluminum foil (I don't use aluminum foil because I don't like my food coming into contact with aluminum, but if it's all you have it'll do the trick). Bake at 425 for 25 minutes.
8.
Remove the lid and continue cooking for another 25-30 minutes or until the chicken is about 180F, golden, and crispy.

While the chicken is cooking prep the ranch! Recipe should be below. <3

Gut Healthy Homemade Ranch

1.
Mix the yogurt, mayo, and 2 tbsp whole milk. Assess the consistency add some milk to thin it out if necessary.
β€’ 1/2 cup plain, whole milk greek yogurt
β€’ 1/2 cup sir kensingtons avocado mayo

Add in the remaining ingredients, taste for seasoning, and adjust accordingly. Usually if it feels off it means you either need more salt or lemon juice.
β€’ 1 tbsp lime
β€’ 1/2 tsp dried parsely
β€’ 1/2 tsp garlic powder
β€’ 1/4 tsp onion powder
β€’ 1/4 tsp salt
β€’ Some freshly cracked black pepper
