Brejay’s Brown Stew Chicken 

Clean chicken with water and vinegar then pat dry.

Green, 2 Red, 1 Yellow, 1 Orange Bell Peppers

Get your green seasoning prepared blend 1 bunch of cilantro, 1/2 bunch parsley, 4 green onions, 8-10 garlic cloves, 3 thyme remove stems, 5 rosemary remove stems, one celery stick, 1 half onion, 1 scotch Bonnet pepper, 1 green bell pepper, 1 red bell pepper & salt for taste add olive oil 1/8 cup or more for consistency you want

Chop 1 of each bell pepper, 2 tomatoes, grate 1/4 ginger

Season the chicken wings with 2tsp of browning, 2tsp garlic salt or powder, 1tsp paprika, 1tsp complete seasoning, 1tsp all purpose seasoning, 1/2tsp onion powder, 1/2 tsp salt , 1/2 tsp black pepper, 1/2 tsp all spice seasoning, 1/2 tsp seasoning salt & mix together well

Add in chopped bell peppers tomatoes, grated ginger & half a cup of blended green seasoning & mix it all together then separate the chicken from the bowl

On a large skillet Add 4-6 table spoons olive oil on medium heat, add brown sugar & stir for 1 minute

Add in chicken brown for 2 minutes on each side then remove chicken from skillet

Add in your chopped bell peppers, tomatoes & grated ginger into the skillet and sauté for about 5 until or until softened

Add chicken back into skillet with chicken broth, water, & half cup blended green seasoning. Bring mixture to a simmer and cover. Let simmer for about 45 minutes to 1 hour while stirring occasionally

Add more seasoning if needed taste gravy as the chicken simmer and cook
