Ingredients

5 - 6 medium potatoes

6 - 8 boiled eggs

⅔ cup mayonnaise

4 tbsp sweet pickle relish

2 tbsp yellow mustard

½ tsp salt,

½ black pepper

½ garlic powder

½ tsp Tony's Creole Seasoning

½ tsp paprika

6 Optional: strips of bacon, chopped

Directions

Step 1

In a large pot, boil potatoes in chicken stock for 20-25 minutes or until cooked thoroughly and fork tender. Drain and set to side to cool for 15 minutes.

Step 2

Once cool to the touch, peel of the potato skin, slice and dice into cubes, and place them in a large mixing bowl.

Step 3

Peel boiled eggs and dice. Add eggs to the bowl as well. Next, add the mayo, relish, mustard, seasonings, and bacon bits.

½ tsp salt,

½ black pepper

½ tsp Tony's Creole Seasoning

½ tsp paprika

6 Optional: strips of bacon, chopped

Step 4

Mix together, taste to see if you need to add any more seasoning. Once it is seasoned to your liking, dust the top with some paprika. Cover and set in the fridge for at least 30 minutes. Serve cold.
