It's tomato season and one of my favorite ways to enjoy it is with a cherry tomato pasta. My first ever TikTok went super viral with my roasted cherry tomato pasta but we're keeping it raw for this one. It's my take on Ina Garten's summer garden pasta but with a few tweaks.

Ingredients

18 oz cherry tomatoes (halved)

¼ cup extra virgin olive oil

8 cloves garlic, sliced

10 basil leaves, julienned, plus extra for serving

1 teaspoon crushed red pepper flakes

½ tsp salt

1 tsp black pepper

½ pound dried angel hair pasta

cup vegan parmesan cheese

drizzle balsamic (optional)

Directions

Step 1

Combine the cherry tomatoes, olive oil, garlic, basil leaves, red pepper flakes, 1 teaspoon salt, and the pepper in a bowl.

Step 2

Wrap and set aside at room temperature for at least 1 hour. 
Before serving, bring a pot of water with a drizzle of olive oil and salt to a boil and add the pasta.

Step 3

Cook and drain once al dente.

Step 4

Add the pasta to the bowl with cherry tomatoes and mix well.

Step 5

Top with vegan cheese, more basil, and enjoy!
