Ingredients

5 chicken thighs

2 tsp chili powder, divided

1 tsp paprika

1 tsp garlic powder

1 tsp onion powder
Salt & pepper, to taste

½ tbsp olive oil

3 limes

1 cucumber
½ avocado

1 jalapeño

¼ red onion

handful of cilantro

1 ½ tbsp honey

1 cup cooked rice
Directions
Step 1
1. Marinate chicken with chili powder, paprika, garlic powder, onion powder, salt, pepper, olive oil, and juice of 1 lime. Rest for at least 15 minutes.
Step 2
2. Cook 1 cup of rice according to instructions and once cooked, add half of the cilantro, juice of 1 lime, and salt to taste.
Step 3
3. On medium heat, cook chicken thighs for 6-8 minutes on each side until cooked through.
Step 4
4. Slice cucumber, red onion, and jalapeno then add diced avocado, half of the cilantro, 1 tbsp honey, salt, pepper, and remaining chili powder. Mix and set aside.
Step 5
5. Remove chicken once cooked through and build your bowl with rice, chicken, and cucumber salad. Drizzle chicken with remaining honey and add a slice of lime.
