Ingredients

1 lb wild boar

2 tbsp sake

2 tsp brown sugar

2 tbsp soy sauce

3 tsp honey

1 ½ tbsp water

3 scallions

2 red peppers

2 tbsp potato starch

1 tsp baking soda

1 tsp Chinese 5 spice

1 tbsp sesame seeds

pinch salt

pinch pepper

Directions

Step 1

Thinly slice the wild boar then put in a large bowl add potato starch baking powder salt pepper and Chinese five spice then set aside

2 tbsp potato starch

1 tsp baking soda

1 tsp Chinese 5 spice

Step 2

In a bowl add sake brown sugar soy sauce honey and water then stir pour most of the mixture over the boar ( reserve a little for glazing when cooking ) then massage the meat for 2 minutes cover and refrigerate 1 hour

Step 3

Slice the white parts of the green onions in about 4 cm lengths then dice the peppers and put meat scallion peppers on the skewers . Add oil to a pan then fry the skewers on medium high heat 5 minutes per side . Drain out the oil put the skewers back in and add a splash of water then cover and steam cook 10 minutes

Step 4

Brush the meat with the remaining glaze then let it get thick and sticky then garnish with sesame seeds and serve
