Ingredients

8 potato

6 eggs

1 onion

250 mL olive oil

1 pinch sea salt

Directions

Step 1

Peel and halve the potatoes then slice to about 1/4 inch thick

Halve the onion and thinly slice then heat the olive oil in the pan on medium heat and fry the onions until just slightly browned

Step 3

Whisk the eggs in a bowl then add a good pinch of salt .

Step 4

Drain the onions and add to the egg mixture

Step 5

Place the sliced potatoes into the same pan and fry a few minutes on medium heat until just changing to golden .

Step 6

Strain the potatoes and add to the egg mixture and let it rest for 20 minutes. At this point you can strain the olive oil through a sieve and save it for the next time you are frying .

Step 7

Put the pan on medium high and add the potato egg mixture . After three minutes lower the heat to medium low and cook 7 minutes .

Step 8

Use a plate to flip the potatoes and put back into the pan and fry the other side until fully cooked approx 7 minutes .
