Ingredients

600 g cod

2 tbsp red curry paste

½ cup cilantro

3 scallions

2 tbsp fish sauce

1 lime

4 kaffir lime leaves

1 tsp sugar

pinch salt

pinch black pepper

1 egg

2 tbsp corn starch

½ cup corn

3 tbsp sweet chilli

1 tbsp sriracha

2 tbsp mayonnaise

Step 1

In a food processor add cod or other white fish fillets ( you could even use salmon) 1 or 2 tbsp red curry paste depends if you like it spicy or not then add cilantro chopped scallions fish sauce finely sliced kaffir lime leaves juice of one lime sugar egg pinch of salt and pepper and pulse the mixture until smooth but not gooey

Next stir in sweetcorn and cornstarch then get a bowl of water and using wet hands shape into Pattie’s .

For the bang bang sauce add sweet chili sauce sriracha and Mayo to a bowl and mix to combine

Heat oil to 375 f then drop In the Pattie’s and fry about two minutes a side or until golden
