Ingredients
½ cup strawberry ice cream
⅓ cup glutinous rice flour
1 as needed strawberry Ice cream
1 as needed vanilla ice cream
1 as needed Chocolate Ice cream
¼ cup corn starch
Directions
Step 1
Get 2 scoops each of Strawberry vanilla and chocolate ice cream and place it on cupcake cases in a muffin tray and freeze 2 hours

Step 2
Melt 1/2 cup strawberry ice cream in the microwave or just let it sit out on the counter until melted

Once the ice cream is cool and melted stir in 1/3 cup glutinous rice flour until smooth

Step 4
Cover the dough with plastic wrap and place in the microwave for one minute then remove and stir microwave one more minute remove and stir then microwave 30 seconds more and stir again
Step 5
Dust your surface with cornstarch then pour out the Mochi dough dust that with corn starch and roll out

Step 6
Cut circles with a cookie cutter then take the frozen ice cream out of the freezer and place in the centre of the dough . Put plastic wrap under it then squeeze the dough around the ice cream and twist the plastic wrap on top to secure it together and make it hold its shape

Freeze the Mochi ice cream for another 30 minutes then its ready to serve
