Ingredients
3 chicken legs
3 chicken thighs
6 cloves garlic
1 thumb sized piece ginger
1 red chilli
1 green chili pepper
3 scallions
1 tsp dark soy
1 ½ tbsp light soy
3 tbsp Chinese cooking wine
350 mL coke
1 tsp sesame oil
2 tsp sesame seeds
1 star anise
Directions
Step 1
Score the top of the chicken then Add the chicken to a large bowl with roughly chopped garlic , sliced chillies sliced ginger the ends of scallions sliced dark soy light soy Chinese cooking wine sesame oil and the coke . The chicken must be covered . Refrigerate up to one hour

Step 2
Heat some oil in a wok then take out the chicken from the marinade and brown it on all sides
Step 3
Add the marinading liquid back into the pan with the chicken 1 star anise and bring to a boil then cover and simmer on medium heat for about 15 minutes

Take the lid off of the pot and turn the chicken then let the liquid reduce until you have a sticky sauce and the chicken is cooked fully . Garnish with the tops of the scallions and some sesame seeds
