Ingredients

2 eggs

½ tsp vanilla

2 tbsp milk

3 tbsp flour

¼ tsp baking powder

2 tbsp sugar

¼ tsp cream of tartar

Directions

Step 1

Separate the egg yolks from the whites and make sure the whites go in a clean grease free large bowl as they will be getting whipped

Add the milk and vanilla to yolks and mix well

Step 3

In a bowl mix the flour and baking powder then sift it into the yolks and mix until combined

Step 4

To the egg whites add the cream of tartar and half the sugar ( 1 tbsp) then mix with an electric mixer on medium speed and slowly add the rest of the sugar in and continue to whip until stiff peaks form

Step 5

Fold a little of the egg white into the yolks then fold the rest of the egg whites in and be careful not to over mix

Step 6

Heat a pan on low heat and very lightly grease it then use a ladel and measure out two high pancakes then add 1 tsp of water and cover with a lid and steam about 5-6 minutes then flip the pancakes and cook a further 5 minutes .
