265 gram whole wheat flour
265 gram all-purpose flour
1 tsp baking soda
1 tsp salt
30 gram butter
370 mL buttermilk
1 tbsp oats
1 eggs

Step 1
In a large bowl add the wholewheat flour all purpose flour salt and baking soda and mix it with a whisk

Step 2
Cube 30 grams of unsalted cold butter and add it to the flour . Pinch the flour and the butter with your fingers until it resembles a crumb texture

In a measuring jug add 370 ml buttermilk then add 1 egg and mix them with a whisk or fork

Make a well in the centre of the flour mixture and pour in the buttermilk . Dont wash the buttermilk jug yet as you will use the leftover buttermilk to spread on top of the dough before baking

With a loose law shaped hand gently mix the ingredients until they come together then turn out onto a lightly floured surface and shape into a circle and flatten a little bit to roughly 1 1/2 inches thick
Step 6
Use a knife and score the dough in a cross shape then brush with the buttermilk thats left over and sprinkle the oats on top

Bake in a 215 c oven for 15 minutes and then reduce the temperature to 195 c and bake a further 30 minutes . Tap the underside of the bread and it should make a hollow sound if the bread is baked fully .
