Ingredients

6 tbsp water

200 grams sugar

220 ml cream

1 tsp vanilla

½ tsp salt

1 tsp butter

Directions

Step 1

In a saucepan add the sugar and milk then stir to combine and Place on medium heat ( you will need to watch this until it’s finished )

Step 2

While the sugar mixture is heating up prepare the cream in a jug with vanilla and salt and mix them together .

220 ml cream

1 tsp vanilla

½ tsp salt

Step 3

As the sugar starts to bubble you can use a wet silicone brush to gently brush down the sugar bit dont stir the mixture . The color should start to darken and when it’s amber take it off the heat. Add the cream and whisk vigorously but carefully then stir in the butter until you have a glossy caramel. Store in an airtight jar and use on multiple things like cupcakes as a syrup for pancakes or even as a caramel buttercream
