Ingredients
2 tbsp red miso
200 ml water
1 litre vegetable broth
1 star anise
1 pak choy
2 scallions
200 gram Tofu
½ tsp white pepper
1 tbsp soy sauce
1 tbsp honey
1 tsp sesame oil
1 egg
Directions
Step 1
Add the miso paste to a pot and heat on medium for about 1 minute to toast gently. Slowly add 200 ml Of water then bring to a simmer and add 1 block of diced tofu and cook another minute

Add the vegetable Broth star anise sliced scallions sliced pak choy soy sauce sesame oil and white pepper

Boil one or two eggs until they are cooked to your liking while the soup is cooking

Add roughly 1 tbsp of honey to the soup then simmer one minute and serve in a bowl topped with the egg and some Scallion tops
