Ingredients

300 gram spaghetti pasta

1 tsp salt

4 clove garlic

2 red chili pepper

6 sun dried tomatoes

3 tbsp tomato paste

2 tbsp olive oil

1 bunch arugula

1 sprinkle salt

1 sprinkle black pepper

500 gram shrimp

170 mL white wine

1 oranges

1 to taste lemon juice

Step 1
Cook Spaghetti in salted water according to package instructions

In a small blender add sun dried tomatoes oil from the tomatoes or 2 tbsp olive oil tomato paste and blend to make a paste

3 tbsp tomato paste

2 tbsp olive oil

Chop garlic roughly and the chillies ( seeds in or out is up to you) then sautee in a pan with a good 2 tbsp olive oil for 2 minutes

Add cleaned shrimp to the pan and cook for 2 minutes then add the tomato paste

500 gram shrimp

Add the white wine and the juice and zest of 1 orange to the pan and simmer a few minutes

170 mL white wine
Step 6
Toss the spaghetti into the pan and add a little pasta water then squeeze lemon juice and a sprinkle of salt over the arugula and add that to the spaghetti stirring all together . Season to taste with salt and black pepper
