Ingredients

2 onions

salt

sugar

pepper

2 tbsp butter

2 cloves garlic

1 red pepper

2 can cherry tomatoes

4 eggs

½ cup fresh parsley

1 tsp chili flakes

Directions

Step 1

Slice two onions then add butter to a large pan and add the onions with a good pinch of salt and sugar . Cook covered for two minutes then uncover add some water scrape the find and repeat until the onions are caramelized about 10 minutes

Step 2

Add 2 cloves of chopped garlic and 1 chopped red pepper and cook another two minutes then add the canned cherry tomatoes salt pepper and chili flakes cook another two minutes covered

Step 3

Make a few holes then crack in the eggs and cover until the eggs are cooked to your liking . Adjust seasoning as needed and add parsley . I like to eat mine with chunks of crunchy baguette bread
