Ingredients

150 gram cherry tomatoes
100 gram vine tomatoes

3 clove garlic

1 red chili pepper

1 zucchini

200 gram spaghetti pasta

1 pinch salt

½ tsp black pepper

400 mL vegetable broth

100 gram pecorino romano cheese

1 cup fresh basil

1 onion

3 tbsp olive oil

Step 1
Halve the tomatoes then thinly slice the onion garlic zucchini and chilli

Get a large deep pan and place the spaghetti in the centre then arrange all the vegetables around the sides

200 gram spaghetti pasta

Season with some salt and black pepper then put 2/3 of the basil on top and drizzle some olive oil

Pour 400 ml of hot vegetable broth over the pasta or just until everything is covered then cook on medium high heat until the pasta is cooked stirring occasionally

Grate in the pecorino cheese and give it a good mix then serve it up and add some more cheese and fresh basil on top
