Sieve
Directions
Step 1
Place a sieve over a large bowl then get a muslin cloth or cheese cloth and put it inside the sieve . Next empty the yogurt into the cloth fold the cloth over to cover the yogurt and let it sit while the whey ( liquid) separates and drains into the bowl . This should take about 2 hours

Step 2
When the whey stops dripping give the cloth a quick squeeze carefully so as not to squeeze the cheese out . Get a container with a cover then line it with another clean muslin cloth then pack the cheese inside pushing down firmly . Fold the muslin cloth on top of the cheese then push the cover on . If it’s a clip box clip in the cover otherwise weigh the cloth down with a can of beans or something heavy. Let this sit in the fridge a few days . When you remove it the cloth will be after soaking up the residual whey and then you can proceed to use it or add salt or herbs or whatever you like
