Ingredients
80 g digestives
30 g butter
400 g cream cheese
200 mL cream
½ cup sugar
1 lemon
1 cup blueberries

Directions
Step 1
Melt butter and set aside then crush the digestives ( or whatever crumbly cookies you decide to use ) mix the butter in then place cupcake cases in a cupcake baking tray and put a tablespoon of the digestives into each one ( makes 9 approx ) push the biscuit down firmly with a glass or the back of a spoon

Step 2
In a bowl add cream cheese cream sugar 2 tbsp lemon zest 2 tbsp lemon juice and mix until fluffy then put a scoop of the mixture on each cupcake case and smooth out

Top the cheesecakes with blueberries or fruit of your choice and eat straight away or freeze 15 minutes
