Ingredients

2 mango

½ cup sugar

2 lime

1 pinch salt

1 tbsp lime juice

1 ¼ cup milk

¼ cup milk

¼ cup corn starch

Directions

Step 1

Peel the mangos and slice the flesh into chunks then put into a blender

Step 2

Add 1/2 a cup of sugar to the mangos the zest of 2 limes and a pinch of salt and pulse until smooth

Step 3

Add 1 1/4 cups of milk to the mangos and blend together then pour into a pan

Step 4

In a cup or bowl add the milk and cornstarch and stir until combined

¼ cup corn starch

Step 5

Put the pan with the mango puree on a medium heat and bring it to a gentle simmer then add the cornstarch mix and keep stirring to avoid lumps this should take around 4-5 minutes to thicken then let it cool for a few minutes

Step 6

If using a mould or ramekins grease them before pouring the mixture in . Alternatively pour into any glass then refrigerate 2-3 hours
