Ingredients

4 cups milk

¼ cup yogurt

Step 1
Add 4 cups of milk to a saucepan and cook on medium low heat stirring occasionally . Use a candy thermometer and bring the milk to 180 f then remove from the heat and place on a heat resistant pad to rest for 5 minutes

Put a large glass bowl on a heat resistant pad then pour the milk into the bowl . Now use the candy thermometer and monitor the milk until it reaches 110 . When it reaches 110 add 1/4 cup of natural yogurt and stir gently . Then place a lid on the bowl to keep the heat in .

Get a very large pot with a lid or I use a large meat roasting dish that has a cover I boil a kettle and wait for three minutes for the water to cool slightly then pour the water in and sit the bowl into it . It is important that the hot water comes up to where the yogurt is so it keeps all the yogurt warm . Obviously make sure you are using appropriate glass for hot water and not one that will shatter when exposed to heat . Now put the cover on and use thick tea towels to cover the container to keep the heat in .

Put the container in the oven with the oven light on to keep a little bit of heat or put on top of your fridge where it is a little warm and let it sit 4-6 hours . The longer it sits the stronger the flavor. I left mine for 5 hours and it was delicious. I put my yogurt in a sterilized mason jar and refrigerated it
