Ingredients

4 tbsp vegan butter

1 cup soy milk

1 tsp lemon juice

200 gram flour

1 ½ tsp baking powder

¼ tsp baking soda

4 tbsp vanilla sugar

⅓ cup soy milk

1 oranges

1 pinch salt

1 tbsp vanilla

Directions

Step 1

Add 1 tsp of lemon juice to 1 cup 240 ml of soy milk and let it stand 10 minutes to curdle and make vegan buttermilk

Melt 4 tbsp vegan butter in a pan and let it cool

Into a large bowl sift flour salt baking powder baking soda and vanilla sugar then stir to combine

Step 4

In the pan with the cooled melted butter add the vegan buttermilk soy milk and vanilla and whisk to combine then pour into the dry ingredients and gently mix until combined

Step 5

Grate the zest of one whole orange into the mix and fold it in then heat a pan on medium high heat and use rapeseed oil or vegan butter to lightly grease it . Use a ladle and pour a half ladle measures on the pan and cook 2-3 minutes then flip and cook a further 2 minutes

Step 6

Serve with your favourite fruit and some maple syrup
