Step 1
On a baking tray place peppers tomatoes onions bashed garlic cloves salt pepper fresh basil and thyme then drizzle olive oil and roast 375 for 30 minutes

Thinly slice the tomatoes yellow and green zucchini and Aubergines then take the veggies out of the oven remove tomato skins and pour all I to a blender with the juices from the roasting tray and more fresh basil and blend

Pour the sauce On a baking dish or cast iron skillet then layer the veggies cover with foil pricked with holes and roast 45 minutes then remove foil and roast 20 minutes more
