Ingredients
250 gram rigatone pasta
1 cloves garlic
1 pinch salt
2 tbsp pine nuts
1 cup fresh basil
1 cup parmesan
¾ cup cream
½ cup olive oil

Directions
Step 1
Generously salt boiling water and put the pasta on to cook

Step 2
In a pestle and mortar crush one clove of garlic with a pinch of salt then add pine nuts and crush them down and start adding a drizzle of olive oil

Add in the basil leaves and grind them then add more olive oil to make it looser and finally stir in a handful of the parmesan cheese reserving some to mix into the pasta

In a pan with a drizzle of olive oil fry onion and garlic then add the pesto toss in the pasta with the cream and reserved parmesan cheese ( you can add as much parmesan as you like ) then toss the pasta to coat it in the sauce and enjoy
